Fig and Gorgonzola Salad
& Classic Fruité Vert

- 250g / 9oz mixed salad leaves
- 6 ripe figs
- 200g / 7oz gorgonzola
- 20g / 0.7oz pine nuts
- 20g / 0.7oz honey
- 20g / 0.7oz butter
- 1 shallot
- Pinch of salt
- 1/3 glass of balsamic vinegar
- 1 glass of olive oil
Mince the shallots. Pour onto them the olive oil and vinegar, then the salt.
Cut the figs into quarters, then fry them for 1 minute with the butter and honey.
Pour the vinaigrette on the mixed salad leaves.
Add the coarsely-cut cheese, then the still-warm figs, then the pine nuts. Serve immediately.
