Pan Fried Mackerel Fillets

& Rosemary and Thyme Olive Oil

  • 6 mackerel fillets
  • Salt
  • Pepper
  • 1 onion, chopped
  • Half a glass of white wine vinegar
  • 3 garlic cloves, minced
  • Half a chilli
  • Thyme
Lightly salt the fillets, fry with a little olive oil for 2 minutes, and remove from the pan.

In the same pan, blanch the onion. Once it is cooked, deglaze with the vinegar.

Add the garlic, chilli, thyme and salt, then reduce the liquid by half.
Pour it on the mackerel fillets, cover, and leave to infuse for 1 hour.

Serve hot or cold.
